it is your lucky day because I'm going
to show you how to make the easiest
gelato style ice cream you've ever eaten
all this recipe consists of is heavy
whipping cream a sugar substitute some
eggs and cocoa powder and we know
everyone has all of those ingredients in
their household so let's start by
bringing some heavy whipping cream and
some swerve to a boil so you're gonna
add one cup of heavy whipping cream and
the third cup swerve confectioner sugar
to a pot and what we're doing here is
we're mimicking the condensed milk that
you would normally add to an ice cream
but condensed milk is extremely high in
carbs and sugar so we are basically
making a low-carb version so if you guys
don't have swerve that's totally fine
what I like about using the confectioner
is that it melts into the milk
whereas erythritol won't melt in like
normal sugar so if you don't have swerve
you can you can use erythritol the same
exact amount but you'll have more of a
gritty taste in the ice cream it'll
still be just as delicious so while
we're bringing this to a boil we are
going to separate our eggs because we're
only using two of the yolks and you can
see that the condensed milk is boiling
so you can lower the heat and then to
the milk once it starts once it is
boiled we're going to add a tablespoon
and a half of cocoa powder and let it
continue to cook so as we bring this a
chocolate heavy whipping cream mixture
back to a boil allow that to continue to
cook we are just going to add a little
vanilla to our yolks and then just give
that a mix
mixture will start to thicken and that
is what replicates the condensed milk oh
that's a really good question I used to
go to the beach every summer with my
best friend and there's a really good
ice cream place that has an amazing
butter pecan butter begins my favorite
so I get it no matter what ice cream
place I'm at I never change it up and
it's always worth it but down at the
beach LBI Long Beach Island okay so this
makes sure it looks good we're gonna
turn the heat off so you can tell it's
thicker and the chocolates completely
incorporated and we just want to let
this cool for a second we don't want to
add a hot licks mixture straight to the
eggs otherwise the eggs could cook so we
let our condensed mixture cool looking
good and thick and we're just going to
add it directly to the yolk and it'll
make sure we just made and slowly
incorporate it you could use a hand
mixer if you have one we've used it in
the past but it's not mandatory
you're gonna squish it with a fork you
just want to make sure it's all fully
incorporated slowly add some and give it
a mix and add some more if you use a
hand mixture you're less likely to have
like chunks of cocoa powder but who
hates chunks of cocoa powder so as
you're mixing you want to get it a
little frothy you can see the bubbles
forming that's a good thing I'm going to
add the last bit again a hand mixer will
be a lot easier but this just goes to
show that you don't need gadgets to eat
ice cream so that looks really
incorporated to me feels incorporated so
we are done this is it
drink up just kidding so what you want
to do now is put it into the freezer you
want to let it set I would say for a man
of three to four hours we usually do
four to six you don't want to let let it
just sit for the entire four hours in
the freezer so I like to go in every
like 45 minutes or hour and just mix it
up with a spoon so it it hardens more
evenly that way and it's smoother at the
final product because when it's in the
freezer freezer the top will harden
first then I'll slowly harden as it goes
down so mixing it allows it to harden
quicker so it's been about an hour and a
half and I'm mixing it around you can
already tell it's starting to form it's
really really thick right now so in case
I didn't mention already this is gonna
be more of a gelato ice cream so if you
haven't tried gelato in my opinion it's
better than ice cream gelato I generally
like thicker denser it's really really
rich it like coats your mouth it doesn't
melt away like ice cream might if you
guys have any better like descriptions
of gelato please put them below cuz I
clearly don't know how to describe it
we're gonna pop this back in the fridge
we'll check on it in another hour it's
been about another hour I'm gonna stir
it one more time oh it's already
hardening if you have a strong man in
the house this is the time to get them
the thing is we do it for ice cream
see it's thickening it looks good all
right we're gonna put this back in see
in a little bit so it was gonna stir it
one more time it's been exactly 4 hours
but I realized it's perfect and ready to
go I'm gonna do a little couple scoops
for us there we go
yeah good that looks but this is
definitely gonna be really rich and
chocolatey so I'm gonna try it it's like
nice and creamy mmm that's where ice
cream should taste like Keo or non hito
oh man it's so rich the heavy whipping
cream and the chocolate and then it's
just the perfect amount of sweetness
there's no words to describe how
delicious it is you guys really just
need to make it hmm
so we've had our fair share of low carb
ice cream hail atop and lightened all of
them and this just is the top dog it's
probably it's definitely the lowest carb
of all ice creams and it's the creamiest
and most ice cream like so if you want
to remember what real ice cream tastes
like and not worry about paying seven
bucks for it
finally give you in the grocery store or
going over on your carb limit make our
low carb chocolate ice cream you won't
regret it
mmm oh good it's too good you don't want
it in the house your need at all all
