well it's coffee break time and we are
going to be making keto cheese danishes

I used to love cheese danishes when I
was practicing the standard American
diet and so did CJ and so I wanted to
try and recreate that in a ketogenic
manner so that we would have options for
brunches coffee breaks parties just for
fun
vacations any time that you're wanting a
pastry this has a dough that's similar
to fat head but there's not cream cheese
in the dough but it does have a
mozzarella cheese base so it takes a
little bit of working but it's not super
difficult and hopefully my steps and
tricks will help you to create this
delicious dessert so let's go ahead and
get started okay so we need to preheat
our oven to 400 degrees you're also
going to need a half sheet pan covered
in parchment paper for baking your
Danish so the first thing that we want
to do is we want to prepare our cheese
filling and you can just do this in a
medium sized Bowl if you make sure that
your cream cheese is well softened you
won't even need an electric mixer you
can just use a whisk like I'm going to
so I have 6 ounces of softened cream
cheese
I need a teaspoon of lemon juice
I need a half a teaspoon of vanilla
extract you need a quarter cup of
sweetener I'm going to be using powdered
confectioner's natural sweetener here
just because I want extra blend ability
and I'm going to stir that around

make sure and get all your lumps out
from your sweetener whatever crimes
you're using then I'm going to be adding
the yoke of one egg I'm going to take my
spatula to make sure that I've gotten
everything well combined and we're going
to put this into the refrigerator and
let it chill why we are making our
Danish dough so there's our cheese
filling okay so now we are going to
start our dough the first thing that you
want to do is you need four tablespoons
of butter softened you also want four
tablespoons of sweetener I'm going to be
using the confectioner's monk fruit
you're tall again in this step but you
can use whatever type of natural
sweetener that you like if you wanted to
use granular you could we are going to
be melting this into the butter and
stirring it very well so that should
incorporate it if you wanted to use a
granular product that's four tablespoons
I also want a teaspoon of vanilla
extract so we want to heat this in the
microwave and get it melted so that we
can incorporate our sweetener into our
butter

I'm just going to whisk this together
and tell our sweetener combines into the
melted butter you can see that it's nice
and smooth now next we are going to
combine our dry ingredients so you need
six tablespoons of almond flour you need
three tablespoons of coconut flour and
you need a teaspoon of baking powder and
we're just going to whisk that together
just to get our dry ingredients combined
so now we need a large bowl and you want
one and one quarter cups of shredded
mozzarella cheese going to begin melting
this in the microwave and we want to
start with a minute

all right it is melted we're going to
move back over to the counter we want to
begin adding our other ingredients we'll
start to pull together we are going to
pop this back in the microwave for
another 30 seconds that's just going to
assist all of our dry ingredients into
pulling into the dough before we add our
egg so we're just going to continue to
work it while it's warm and we are going
to go ahead and add our egg this is one
whole egg and I'm going to start working
that egg in with my hands the dough is
still warm but it's not super hot

to get all of our egg combined and if it
gets too sticky you can always pop it in
the microwave for just a couple of
seconds
additionally wetting your hands helps a
lot with this type of dough okay it is
thoroughly combined you can see it's a
nice beautiful yellow color and I have a
piece of parchment paper here down on my
counter I have wet the counter
underneath it that was a tip from some
lovely subscribers the last time I need
worked with the dough and it does help
it to stick to the counter a little
better and I'm just going to place that
in the center I'm going to take an
additional piece of parchment and put it
over the top that's going to assist us
in rolling out our dough

a square what does have to be a square
it would be helpful okay I'm going to
cut our dough into four pieces to make
four danishes so I'm just going to go
right up the center I'm just using a
pizza cutter you could use a knife if
you want to put a piece of cutter makes
it nice and easy just folding this into
some kind of assemblance that resembles
a Danish if you wanted to square it off
and make it perfect you could but I'm
not going to and then I'm just going to
place this on my parchment paper

remember you have your water here if
it's starting to stick a little bit to
your parchment it's okay

okay there's our fourth Danish shell so
can you tell people what you were trying
to do sure
so theoretically I was trying to make
them an into a square so that I could
kind of make almost like an envelope
with the filling on the inside but
that's not what's happening here these
are going to be freeform danishes
so I have gotten the filling out of the
refrigerator and I've just given it a
stir and I'm going to place that in the
center of each of our danishes I'm going
to create just a little bit more of a
little this guy

I can put in more feeling with whatever
you have left because that's the best
part right okay so we are going to put
this into our preheated oven remember we
started at 400 and we are going to start
for 10 minutes there's our beautiful
danishes I'm going to let them cool and
then we're going to ice them with some
cream cheese icing
to do our cream cheese icing I have two
ounces of softened cream cheese here in
my bowl I need three tablespoons of
confectioner's natural sweetener I also
want about a teaspoon of vanilla extract
and I'm just going to start to combine
these and my ol king the confectioners
sugar in getting all of our lumps out

okay now I'm going to add just a little
bit of heavy cream just to thin it out a
little bit I'm going to put in about two
tables

so I just have my glass measuring cup
here and I am going to put that into a
ziplock baggie that I have folded over
the measuring cup it'll just make it
easier for me to get it into the bag
so now I have it in my baggy and I'm
just going to seal that up not all the
way just enough so that we can get all
the air out and twist it so that when we
snip the corner it should assist us in
making lines across to our Danish so I'm
just going to snip a very tiny hole just
tiny as I can get and then I'm just
going to start putting it over our
Danish like so and you can do as little
or as much icing as you like

I used to love cheese danishes me too so

umm-hmm
it's real good I like the I guess the
Danish part GZ killing no no the actual
actual dose oh and then the cheese
filling is good too oh maybe a little
bit more sweetness but uh but really no
with the frosting on it that actually
helps with though counterbalance camera
balance as well so I like it it's nice
because again this is this used to be
something I really liked when I wasn't
doing keno I did a Danish and we have it
with coffee so brings back fond memories
from the sad days of American night yes
