hey what's happening guys it is freezing
here it is really cold actually it's
been snowing the past three days in
Buffalo and in my mind the best way to
warm up from some cold weather it's with
some soup so today I'm showing you how
to make keto broccoli cheese soup and
this keto soup recipe it's so rich so
creamy and it just has so much cheddar
cheese deliciousness to it Plus each cup
has less than five net carbs that said
let's get right into the good stuff
make some low-carb keto broccoli cheddar
soup alright just like with pretty much
all keto soup recipes we're gonna do all
the prep work for our soup first
so as you're seeing here we're gonna cut
up four tablespoons or 56 grams of
salted butter and set it aside then
we're going to cut up 2 ounces or 56
grams of full fat cream cheese and set
that aside as well we're also going to
measure out one of the quarter cups or a
hundred and forty grams of shredded
cheddar cheese because of course we are
making praça dos OOP and we'll
definitely need some cheddar cheese then
once we've got our cheese situation
situated we're going to prep a small
onion so as you just saw wanna lay down
some wet paper towel underneath our
cutting board so it doesn't slide all
over the place while we're prepping our
onion and then when we've got the ends
of the onion cut off and we've removed
the skin of the onion we'll want to
slice it up and dice it up like you're
seeing here so once our onion is diced
up and looking good like this we're
gonna use the flat side of a knife to
remove the skin of a large clove of
garlic now once we've got the skin
removed we're gonna give the garlic a
good mincing and when that's taken care
of we're going to add it to a small bowl
along with the diced onion lastly we're
gonna prep the main ingredient for our
keto broccoli cheese soup and that is of
course the broccoli so as you're seeing
here we're gonna cut the stem off a
small head of broccoli and then we're
gonna cut the head of broccoli into
smaller pieces now once we've taken care
of that we're gonna mince the broccoli
into tiny tiny pieces and once we've got
our broccoli looking good like this
we're gonna add it to a medium-sized
Bowl and
aside okay so now at this point we're
gonna turn our stove up to medium-high
heat and then add the butter that we
prepped from earlier to a large pot
we're gonna let that butter melt down
just a little bit and once we've got the
surface of our pot covered in melted
butter we're going to add the onions and
the garlic now once you've added those
we're gonna use a wooden spatula to mix
them into the butter and once the onions
become soft and translucent and the
garlic becomes fragrant we're gonna add
two cups or 475 milliliters of chicken
bone broth to our pot we're also going
to add the minced broccoli at this point
as well and when we've added it we're
just gonna give the broccoli a good stir
into the other ingredients and then turn
the heat up all the way to high now once
our broccoli soup is starting to boil
we're gonna give it a good stir and then
start adding some of the other
ingredients that said we're gonna add
the cream cheese that we prepped from
earlier along with about a third of a
cup or 80 milliliters of heavy cream and
then we're gonna give those a good mix
into our keto broccoli soup so once the
cream cheese dissolves and the heavy
cream is well incorporated into the soup
we'll bring the broth back up to a boil
and add the shredded cheddar cheese that
we prepped from earlier now want to give
the cheese a good mix into the soup and
we'll want to make sure that we mix all
the cheese until it melts once it does
we can turn the heat down to low and
simmer the broccoli cheese soup until it
thickens up and if you like an extra
thick broccoli cheddar soup I highly
recommend adding a quarter teaspoon of
xanthan gum and working it into the soup
while it's simmering anyways that is how
